Banana Cake And Fondant

I have a bride that wants a banana cake covered with fondant. I am not sure I can do it, as my banana cake recipe is extremely soft and moist and I am afraid that it will not hold up under the weight of the fondant. Any suggestions would be really appreciated. TIA

That's a good question and I'm curious of the answer too. I have to make a fondant cake and am doing a layer of banana cake in between 2 layers of chocolate cake in each tier. I planned on covering it with ganache first, as I always do, before covering with fondant because that really helps support the structure of the cake. If your banana cake is very moist, maybe you can omit some of the bananas so it is more cake than banana and has a little more structure to it? Also, when it comes out of the oven, if it has a dome, you can press it down to level the cake, rather than slicing it off - that always makes the cake more dense too. Would love to hear other options too. Good luck.

I agree with rooneygirl, you might try to reduce the amount of bananas and add some banana extract to add more flavor and compensate for the reduction of bananas. I have a very moist Rev Velvet recipe which I have covered with fondant and I havent had any issues with it, but I always use that as the top layer considering it will not hold up the weight of other cakes. I've done it before, but I guess it depends on your recipe. The beach ball cake (you can see it in my photos) I did was a chocolate banana cake and it was completely fine under all that fondant. The cake for super moist as well. I had no problems what so ever. (except for covering the "beach ball", but that was cause I was still learning lol)

I have used banana cake with fondant for a wedding cake it was fine , I did use it as the top tier though.

It was the groom's request and I think the only thing the poor guy had any say in for the entire wedding.

I had been searching for a banana cake recipe for my daughter's upcoming wedding and had tried a couple of recipes, but nothing really measured up to what I was looking for. But my last cake was a "Hummingbird Cake" found in the recipe section here on CC which is a banana and pineapple cake basically. (It called for pecans and walnuts also, which I omitted.) I had decided to give the recipe a try as I was determined to find a banana cake for the wedding.

So I made it for my daughter's bridal shower and It was delicious! It is a moist and dense cake. I torted and filled it with dulce de leche and banana cream cheese icing and then covered it in fondant. (It is the Wedding shower cake in my photos) It had a wedding dress cake on top of it and it was also a heavy cake, but it held up beautifully on top of the banana cake.

Everyone at the shower raved about how yummy it was so my search has now ended and this will be the recipe I will use for the bottom tier of her wedding cake in the fall!

AI have an awesome banana cake firm box cake. It is a white cake one pkg of instant banana pudding. Mix those together with 4 eggs 3/4 cup veggie oil 3/4 cup banana rum mix together 5 min bake 350 till done about 40-50 min. tastes great and will hold up to heavy fondant. Yummy

This cake was banana rum....and it held up beautifully under the heavy weight of the fondant! I used Duncan Hines yellow cake mix...added a half box of banana instant pudding, and then two very ripe smashed bananas..Replaced 1/3 water with rum and It was delicious!
