One specialty bakery in Seattle charges $2.50 each. icon_eek.gif

I dont remember how much i paid some macarons in London, at the french bakery.. anyways in my city a couple of bakery charge them 2 each one, which is 2,50 i guess.

scp1127 how small are they? normal size is a lil bit bigger that 1inch..

I think the Laduree shop in London charges from £1.65. Or it may have been £1.35 But somewhere around that figure.

I have a template I made. I'm guessing 1 1/4". I'm not going to sell them until I open my retail store. I don't think they will sell in my market on the site because they are not known around here. Also, I don't sell on the site because I don't want another shop to see my site and get the jump on selling them.

I am still working on flavors. I don't like the sweetness of IMBC (even though my IMBC is not sweet). I have used gourmet jams alone and the jams with the buttercream. Also, lightly flavored buttercreams don't seem to add enough flavor.

Any suggestions on this?

I think the way to introduce macarons and other "foreign" cookies is by including them in a gourmet cookie tray. People will taste them, and start saying "boy that was good whatever it was"...and then they will ask for them.

As far as jam flavour is concerned, I make my own from frozen fruit with half the sugar of regular jam recipes, and I boost with candy flavour and citric acid.

i know a baker from my city and she is very good on making macarons.. she uses only ganache, dark and milk chocolate. With white chocolate ganache you can add some drops of fruit essences (orange, lemon...).
what's IMBC?

The jams I use are an award winning gourmet line and the taste is incredible. I can't do better than that. In fact they are the best I have ever tasted.

IMBC is Italian Meringue Buttercream.

I forgot to say that I use ganache, but just semi sweet. The buttercreams I see used are the ones that baffle me, and I love the buttercream, but just not here.

I make macarons myself and have had many professionally made macarons. Bakeries usually charge between $1.50 to $2.25 CAD. I once went to this place in Toronto who charged $2.75! This was simply too high considering that they were cracked, and a little soggy.

Hi scp - have you got a copy of the I Love Macaroons book by Hisako Ogita?
Brillante.
Her suggestions for combinations - flavours - colours and everything one needs to know is well worth the read .

Not that i am saying copy what she does - but it is very good for giving one ideas.

My most popular Macaroon requested is the Pistachio with a pistachio cream filling.
