creamcheese filling/decorating timeline question

I've read plenty of forum results on the order of baking/filling/fondant covering..etc. But still question some stuff. Here's what i planned on doing:
On Thursday- Bake cake , Fill with cream cheese frosting and crushed oreos , Cover cake in buttercream.
Over the next few days, Friday, Saturday...Deliver Sunday...I was going to decorate the cake (Fondant Accents)... I know the cake cannot sit outside the fridge because of the cream cheese filing... But if i'm putting it in the fridge all those days, will the cake itself dry out?

I could also do a different filling which may be better, so then the cake can sit outside the fridge overnight while i'm not decorating.

Thoughts?

If you want a cake to stay moist, wrap the layers (separately) in plastic wrap as soon as you can after they come out of the oven and freeze them for at least 24 hours. I generally level my layers before freezing them. Since it's a buttercream cake, fill, crumb-coat and ice the cake right out of the freezer. Besides helping to keep the cake moist, this helps the buttercream go on smoother and you have less time for the cake to dry out (although it won't dry out too much in a couple of days once it's been filled and iced). Then you have all the rest of Friday and all of Saturday to decorate it. How does that sound for a schedule? Will that give you enough time to do what you want to do?

Once the cake is covered w/icing it should not dry out.
