I have a bride who has ordered 300 cupcakes from me. She wants edible diamonds on top of each cupcake. In addition, I will add pearls. So, I think the diamonds need to be really small as to not overwhelm and I'll probably just go with clear, round ones.

I have never worked with isomalt and I think I need to use the cakeplay isomalt sticks. Can anyone tell me about how many sticks it takes to make the smaller jewels? I know this can't be an exact number, but I'd probably use the 3/8" size of molds and I'm going to need about 300-325. I don't want to overbuy materials for sure, since they are so expensive.

Any advice would be greatly appreciated.

If I were you, I'd just purchase the edible diamonds. Just my opinion.

You need first of all to confirm with the bride about how many pearls and diamonds she expects to see on each cupcake.

Luster spray is the only stuff that will work on piped icing.

Isomalt comes by the pound (CK Products brand in North America)and the small gemstone moulds are very cheap. You would be paying about 5 times more for the isomalt sticks you mention--which are intended for heating and pulling into ribbons, NOT for melting and moulding.

You can figure how much isomalt by using a measuring cup to fill the moulds with water.

Pearls can be made quickly in bulk from fondant, and also dusted in bulk after they dry. Cake Central blocks the site that I refer to, so you will have to use google to find the fast and simple way.
