Agar-Agar Conversion For Gelatin Michele Foster's Fondant

Hi! First of all, I apologise if this is a repeated question but I tried looking over the net and I can't seem to find an answer.
Recently, I made Michele Foster's Fondant, and I made it accordingly to the recipe, using gelatin.
I would like to try making it again but this time using agar-agar as it's vegetarian and much healthier and cleaner as I'm not a fan of using gelatin.

Would like to ask how much agar-agar should I substitute.
For example, 1 tea spoon of gelatin equals to how many teaspoon/tablespoon of agar-agar.

I came across a few websites, some said that substitute equal amounts while some said that agar-agar is thicker so substitute for less?

Hopefully someone can help me out here.

I like www.joyofbaking.com On her chapter substitution you can find a conversion for gelatin>agar agar.

Hi, I was wondering if you ever tried this and how it worked out? I was thinking of doing the same thing and also pondering the same question. I have agar agar powder on hand from a vegan order I filled not long ago and I would really like to use some more of it!

Hi I was wondering how it turned out? I also need to try and make Michele Foster's fondant with agar agar I was just wondering if you had any tips and suggestions for the substitution.

Reviving an old thread here... I recently made a batch of MFF with gelatin (which came out wonderful) and two days later, a batch of MFF using agar agar. I used the substition found on the joyofbaking website, and the fondant turned out very crumbly. Not nice and stretchy like the gelatin one. So for me, it's back to the drawing board to find a good non-marshmallow vegetarian homemade fondant.

Minh Cakes, Did you ever find a decent vegetarian fondant or the conversion with agar agar to work? Do you know of any other vegetarian subs for gelatin? I was reading about agar agar and it says to boil it and rest it etc before it will work, as a total newbie to vegie things it seems very easy for me to mess up even if the recipe did convert well! Has anyone tried xanthan gum instead? Thanks!

AThanks Minh cakes, I should be able to have a mess about with it towards the end of the month, so I'll look into it a bit more and let you know if anything works :-)
