I have watched inspired by michelle's chocolate ganache youtube video and she recommends 35% milk fat in heavy cream. I have only seen one brand of heavy cream here called Farm Lands which has 8% fat. Does anyone else use this brand for chocolate ganache and actually had success? Is there any other way I can increase the fat to 35% and is this necessary?

It is not heavy cream if it is only 8% fat.
I just looked up the website for Farmlands heavy cream and I think that you may be confused. The 8% that you are seeing is that one serving provides 8% of your daily recommended intake of fat, it doesn't mean that the product itself only has 8% fat. On my bottle of canola oil which is 100% fat, one serving provides 22% of your daily recommended intake of fat.
Looking at their website, they offer a 40% fat heavy cream and that provides 9% recommended daily intake of fat per serving.
