Make A Rice Crispy Wedding Cake Taller Than My Pan?

a customer wants me to make a wedding cake rice crispy (naked no frosting) She wants the rice treat cake she saw on pintrest with the fruit on it. ribbon on bottom of each cake.

In the picture it shows a 4 " tall cake I a can only get about 1.5 with my pan or 2 . Im trying to figure out how they are able to get such perfect sides and such depth. I've made a couple batches of this stuff and I have to tell you I'm ready to throw in the towell.

sizes Im making are 12" 10" and 8" square pans

so my question is how to I get a square rice crispy treat cake with nice sides with some depth?

how much should I charge? Im working solo at home with one pan to cook in , man this stuff is messy. it makes me very very grouchy! should I just send her to a bakery? .

You can buy 4" deep pans but they cost an arm and a leg. You will need square 8-10-12 pans to get the sides smooth but they can be 2" deep.

Cut some pieces of cardboard to fit inside any pan to make it 4" deep. Line smoothly with baking parchment and press in your mixture. Press it up firmly against the sides to make sure they come out flat. Then fill up the pan and press the top down with a cookie sheet to make the top look nice. Chill well before taking the paper off.

If that looks OK then you can make your bigger squares the same way. If you are having trouble, add less cereal; a slightly softer mix makes this stuff easier to shape.

I did this exact thing for my best friends wedding! I didn't want to buy new pans so I used my 2" high ones and stuck two together and just blended the seams...you couldn't tell it was two layers pressed together! So much fun and sooo easy!
