Does anyone know how to cut down on a cheesecake recipe so that I have small ones for samples? I'd like to be able to make a variety of cheesecakes for tastings and pictures etc... I am just starting out adding cheesecakes to my cookie business. Not real sure how to start. Not even sure which category to post this in. Thanks for any help. I will post this in other categories also.

I guess it will depend on the recipe you normally use. I often make mini cheesecakes and use the same recipe for a large baked one but rather than baking for 35 mins, then leaving to cool in the oven for 2 hours, I bake for 15 mins and leave in the oven for 10. I bake them in muffin cases, line the bottom with the usual biscuit base in a cupcake tin pour the cheesecake mix on top and bake.
Recipe I use for 12:
400g full fat cream cheese
150g caster sugar
2 eggs
1tsp vanilla extract
