Does anyone know how to cut down on a cheesecake recipe so that I have small ones for samples? I'd like to be able to make a variety of cheesecakes for tastings and pictures etc... I am just starting out adding cheesecakes to my cookie business. Not real sure how to start. Not even sure which category to post this in. Thanks for any help. I will post this in other categories also.

I do dessert buffets and those mini cheesecake pans work perfectly for any cheesecake I have tried. I get them on Amazon.
Because cheesecakes are one of the few desserts that actually change for the good with short-term freezing, you could keep them frozen. I only freeze for a few hours for the bakery, but have frozen some for personal use that we just couldn't finish.
I cover the flash frozen chesecakes (my personal ones, sliced thinly) with wax paper and then put them in Food Saver bags. The crystals will harm them.

Make small cheesecakes in mini muffin cups. For sampling, people only need a bite so you can cut them in half.
