I have two questions for you experts icon_biggrin.gif . How much batter do you use for cupcakes. Also what's your average yield of cupcakes per mix? I need to make 180 for a sweet sixteen party and I don't want them to rise to high. I can never figure out how much to use.

I am not exactly sure of the measurements, but I use my ice cream scooper to put the batter in the cupcake cups. This way all of my cupcakes rise to the same level. If my cupcakes rise too much, I put a paper towel over them and place a cutting board or other heavy object on them to weight them down as soon as I take them out of the oven.

A box mix will make 24 cupcakes like it says on the box. Fill them just about half full. A scoop is a good idea to get uniform sizes.
