anyone want to share a great carrott cake receipe with me? my husband wants one for his birthday but does NOT want icing on it, so the cake has gotta be moist and really good. Thanks.

I use a doctored up Betty Crocker cake mix and everybody raves about mine. I use this recipe often for muffins as well

I add

grated carrot about 2
1/2 c crushed pineapple
1/2 c shredded coconut
3/4 c raisons (craisons are good too)
2 T pure vanilla
1 c walnuts

Reduce the water called for on the box from 1 1/4cup to 1 cup.
