Someone requested a lava wedding cake. Can a Lava cake stand up to a wedding cake decorating? I guess it definitely wont be a tier cake as can't run supporting rods through it. What type of icing would you suggest. Do I have to worry about the distance to deliver? What about heat we are in a tropical Country.

The lava cakes I know about have runny middles and are intended to be eaten immediately after baking...I don't think you could get even a 6" tier out of its pan safely.

You could suggest to serve the cake with a lava sauce (soft ganache made with lower fat cream). It could even be served warm from a chafing pan, and when added to a good chocolate cake will definitely have the same presence on the plate.
