I want to roll out fondant directly on my counter. I have regular laminate countertop. If I clean it well with bleach water solution would that be sanitary enough? I have used a large piece of vinyl in the past, but the rolling action tends to make it move, which is a PITA. I sanitize all my equipment and tools with bleach water, rinse and dry. It should be the same with the countertop. Im just paranoid, so thought Id ask. Thanks!

Yes, bleach water for your countertop is fine. (I'd be more concerned with using a piece of vinyl. That's my paranoia.)

All that is needed is a 10% solution of bleach in water; and let them *air dry*. If you are using a towel to dry them you are re-introducing more germs 
To keep your vinyl in place while rolling, place wet paper towels in the corners to hold it. OR put pieces of non-skid shelf liner in the corners

Personally, depending on what's been on the counter since the last time it was sanitized, I either the Lysol pump spray, or the Clorox pump spray. Either way, I rinse afterwards.
And I wouldn't use vinyl, either. I might, however, use parchment paper, if I were rolling out something that's likely to stick, like a thin, sticky, cookie dough.
