Air Bubbles In My Buttercream

Hi Everyone,
I use the Wilton buttercream recipe and everytime I make it there are air bubbles in it. This makes it impossible to get the cake frosted smoothly. Does anyone have any insite as to why the air bubbles are occurring? Please help icon_sad.gif

I don't know what the Wilton recipe is specifically, but usually when you get air bubbles you're beating it too much. Try lowering your mixer speed and mix it slower and that should help.

You are incorporating air into it when your bowl isn't full and completely covering the top of the beater.

Make sure your beaters are completely covered with buttercream...the mixing bowl should be filled to the top with buttercream. Turn on the mixer, we set our mixer around med. speed and let it run for 5-8 min. until the frosting is smooth with no air bubbles.

I also use the Wilton BC recipe. 1/2 butter (well I use margarine) 1/2 shortening 4 cups PS 1 tbsp essence 2 tbsp milk. I had the same problem with air bubbles but it is easily solved by all the advice above. Avoid beating on high which incorporates to much air and you will need to double this recipe (if you have a KA mixer 4 or 5 qt) every time to fill your mixer right up so the whole beater is covered in BC. It won't make a mess.
