I just made a carrot cake whic I filled with cream cheese, covered in white chocolate ganache and then covered with fondant. How long can I keep it out of the fridge safely before its consumed?

I believe cream cheese icing needs refrigeration, then can sit out for 4 hours before being consumed.

Without knowing if your cream cheese filling is perishable or not, I would advise leaving it at room temperature no longer than two hours, in case it is potentially hazardous.

Food safety states that perishables may be out for 4 hours, then discard. Your HD would give you this information. We all stretch this in our personal lives, but for sales, this would be best way to stay away from a potential problem.
