Need Help With Wedding Cake Recipes

I've made cakes over the years with regular boxed cakes, just "doctoring" them up a bit. My daughter is getting married in December 2012 and has requested I make her wedding cake. I'm a little freaked out, to say the least. She also requested unique homemade cake from scratch which is intimidating. I'm looking for a good chocolate cake recipe with either some sort of peanut butter or mocha filling or frosting. It will be covered in marshmallow fondant so I'm not sure if I use a filling then use buttercream frosting or some sort of other frosting to work with the fondant??? I have no idea - my specialty is fondant work and gumpaste flowers so I'm completely lost here.
I'd also like to find a good white cake recipe. I'm a little worried I won't be able to make a moist, flavorful cake because I'll be out of my element.

The easiest scratch cake is Hershey's Prefectly hoolate ake on their site. I make some hanges and it insures a perfet cake.

Here are my changes:

Both leaveners at 1 tsp each
Sub 8 oz of sour ream for the buttermilk
Add a tiny bit of espresso powder if you have it.

Be sure to use baking strips and flower nails in the larger cakes.

For white, I haven't tried it yet, but I'm sure FromScratch's is great, plus she has a full tutorial. I have one but I'm not sure if it needs adjustments for larger sizes since I haven't done it larger.

I fill and frost the cake. If you have used IMBC, that would be my suggestion for the filling and frosting. Flavor with either peanut butter or mocha for the filling. You can use vanilla to cover the cakes just for contrast.

Hi I always use Buddy Valastro from Cake Boss recipe for Vanilla Cake and it is so...good. My hubby always wins a blind taste test from box vs this recipe its that good. So moist, and very sturdy.
