I am very new to cake decorating and have been asked to do a cake for Saturday. I have prepared a lotof the fondant decorations. I have a wedding to go to on Friday night so won't be able to decorate then. I was going to bake the cske today and stick in freezer, take out Friday night, defrost overnight and decorate sat a.m........but I have this evening free. If I bake today and decorte this evening, will it still be fresh for Sunday?

If you cover it in buttercream/fondant, this will lock in the moisture and freshness.

So it should be ok for Sunday if don't tonight? would you do it in adance like this?

I am sure it should be perfect, if there are no perishable fillings. I have done it. Keep it boxed after you finish. what sort of cake are you making?

It's just going to be sponge, buttercream, jam and fondant covering. Reckon it'll be ok? Because its all new to me I'd rather not leave until Saturday morning in case something goes terribly wrong!

I have never used jam but i am almost sure there shouldnt be a problem. I think bcos its a jam filling you might have to pipe some bc filling along the edge of the sandwiching area and place the jam in the center so that it wouldnt seep through.(build a damn or wall) Also, once you cover the cake with b.cream, keep it for a couple of hours before covering it with fondant (in case the jam seeps through) I hope someone more experienced than me could help you out here. As for freshness - it should be ok. I have done it with b.c and it has been perfect. good luck
