Hi everyone,

I am planing to make a chocolate ganache cake with the filling of fresh strawberry and chocolate ganache. I live in UAE where the weather is very hot and humid. I want to know how safe it will be to use fresh strawberries as filling, and for how long do you think they will stay fresh before serving.

sprinklez28~~Welcome to the forum. Personally, I would NOT recommend any fresh fruit be used. You could substitute strawberry jam that is ok to store at room temperature.

If you had access to sleeve fillings, that would be my first recommendation, but strawberry jam is probably available in the UAE.

I just reported a link to an official site that stated that cut strawberries should only be out of the refrigerator for two hours. This is a food safety issue.
