Petits Fours Advice

I have an order for 50 Petits Fours due at the end of the month and I am trying out recipes. I just got done with the first and it was a mess, a jelly roll type cake, just crumbled and looked like Cr** even when I used cutters. So Im looking for suggestions on a good solid cake that works best in this application. Also, every blog (I've read thus far, probably 20) uses Marthas icing recipe and it just doesn't look thick enough to me, so any suggestions there would be appreciated, before I go broke making these darn things and the job won't be worth it......

I just watched alot of videos on youtube for both these and the frosting recipes on there. I found alot of good advice, one thing quite a few mentioned is after making your cake and making two pieces uniform, then fill it with your frosting , and then freeze the cake pieces, then measure after it is frozen to make 1 x 1 inch pieces. Go to youtube, and look up how to make petit fours. Lots of great stufff.

Use whatever type of cake you normally like, no need to make a special recipe. For filling (if any) you can use preserves, ganache, or buttercream - just no mousses or they will melt through the fondant.

Sigh.......Why oh why did I not find that thread before I agreed to do this.........UGH, this is for a bridal shower for an aquaintance and the lady who's throwing it seems to be a real *****, I asked her if she had seen my facebook page because the bride is a regular customer and really seems to like my work and she snapped at me " I don't Facebook!" I was thrown by her rudeness and stupidly agreed to do this job for practically nothing and now I am dreading the thought of it. I AM A MORON!
Lesson will be learned by this mess.....

I would tell the lady who is throwing it to find someone else. If you don't want to make waves say that you've never made them and don't want to disappoint them, or just say that you don't like the hostesses attitude. The rude lady still has a few weeks to find someone else. When she realizes how much it will cost her, she should come back to you as the the sweetest lady in the world. This seems to be a case of "no good deed goes unpunished". If things get too bad and you still agree to do it just think of it as a learning experience and think of it as volunteer work if you don't make a profit or lose money in preparation.

Maybe you misinterpreted her reaction, maybe she is just one of those people who HATE Facebook, and her anger was more at that than at you. If she is just a jerk try to get out of it now. If the bride is a good customer and values your service you won't lose her,. she probably will understand if this lady has a bad reputation with dealing with people.

Don't panic. Minette Rushing of Savannah Cakes has a tutorial on you tube. Go to youtube.comsavannahcakes I think it will help you. She shows you how to make the liquid frosting and then how to actually cut and dip them. You can do this! thumbs_up.gif
