Good day, I recently made the WASC recipe using BS Carrot Cake mix, and added shredded carrots to it, they were AWESOME! Love the way they came out, the recipe made 38 CC's. I would like to make a candy carrot slice for the top of my CC's next time, but would like it to be easy.
I prefer it to be crunchy but have a very sweet flavor, and will roll up the carrot slice to resemble a rose, does anyone have an easy way of doing this? Many advanced thanks.

Carrots have a LOT of water. You have to get rid of it to add candy coating.
Make dry carrot slices first--slice carrots and dry on a cookie sheet in a 200F oven overnight until DRY.
Then they can be candy coated by dipping into a cooked hard candy batch--use long stainless steel tongs and wear oven gloves.
And after you do all this, you will understand why most people make marzipan or fondant carrots with little green icing tails for CC CC...
I recently did candied carrot ribbons for carrot cake cupcakes. I used a vegetable peeler to get thin ribbons. Then I made up a simple syrup on the stove and put the carrot ribbons in for about 4 minutes. I laid them flat to dry and they were perfect.
