I am baking a cake for a birthday party this weekend, where the temperature will be close to 98, and the party is outside. What icing would be good to use that wont end up being soupy or that wont slide of the cake and cupcakes? icon_biggrin.gif Thanks!!

In all honesty, no icing is meant to stand up to temps near 100F.

An AMBC like the one mentioned above will have a higher melting point than a butter based BC, especially if you use hi ratio shortening, but I'd say that even that won't survive more than 1/2 and hour in the shade and 2 minutes in the sun.

If I had a similar situation, I'd keep the cake in a/c until about 15 mins. before cutting & serving and encourage the guests to see it in the cool.
