Large sheet cake

How would I go about making a sheet cake that would serve 250? Would you typically use a 2" or 3" pan, what size, and how many? How many layers of filling are typical for a sheet cake? I normally don't do them, but this is a special request. The numbers are getting a little jumbled in my head as I'm looking at my charts. icon_smile.gif

Wow! that's some sheet cake. lol... all kidding aside. my sheet cakes serve 100 ppl so you would need 2 1/2 for that size group. I make mine 3" and yes I do fill them.

Now here is my question to you. Will they be set out for the guest to see? If Not then I would just make 1/2 sheets and not the full sheet.. Would save me a lot of time.

Yeah I thought that sounded a little big for a sheet! Yes it will all be out for the guest to see. Yikes. I wanted to use 3" pans, like 5 9x13's in 3" pans... would that be enough if I filled them? Should I use a different size? Arg.

5 9x13'S are only 1 1/4 sheets. so you would pretty much have to do 10 9X13's... might be worth it to spend the $20 on a 1/2 sheet pan which is 12X18... at least then you're only doing 5 icon_smile.gif

Good Luck! I'm new at all of this and just made my first full sheet w/ an extra 1/2 last night and it took me forever!

So if I were to buy a 1/2 sheet cake pan should I get a 2 or 3 inch deep?

When I'm teaching a beginners class, I tell the incoming students not to waste their time or money on a qtr sheet cake pan. Buy the half sheet, because most people want to double up on the layers anyway. Just cut it in half fill one side and stack the other half on top.

Unless you have lots of qtr sheet pans in this case I would buy or borrow 2 half sheet pans. Will save on the time.

Two inch is typical.

None. Typical sheet cakes normally consist of one two-inch layer.
Kitchen cakes are 2 two-inch layers.

12x18 are pretty large and hard to handle if you don't usually work with them. I don't have a cooling rack that large so I use one of the extra racks from my oven when I have to make a 12x18. I much prefer working with 11x15 even if it means making an extra cake.
