HA!! Corn oil is $10 gallon right now, that's not cheap/free either.

I agree with all your comments. We have our prices. If the person can't pay that amount I suggest other designs according with their budget or refer them to other bakers. Relating to friends I always told them that the amount paid by them was my discounted price because of "x" reason. I have clients that order every year their cakes from me, refer me clients, and so on. I told them that if someone ask the price just said "x" amount because of the friendship, because the long time client relationship, etc. Or tell them the amount that I would charged without any discounts/concessions.

The few times that I have created a special cake for a customer and they received the benefit of a great deal-I tell them, "If anyone asks, the next cake like this one will be $$$."

I know you have already handled this but I'm just reading it now and wanted to chime in...

I don't like the suggestions to say that was a promotion that's over. That is absolutely not true. What I would say in this situation is that when we do new techniques we have to come up with a price in the beginning. After the cake is completed, we have a better idea of the real time and difficulty involved and the future price for the same cake will be a more accurate one.

When he said " but you did my friend's cake it was only xxxx amount" I would have said " oh THAT cake! Wow, I remember that one! It took me about three times as long as I thought...can you believe that after I did that one my hand was so numb from rolling out all that fondant I had to make a special trip to my physical therapist...OH!!! And something else, that took SO MUCH MORE in materials cost than I thought it would....hmmmm,now that you mention it, I think that I need to increase that quote I just gave you! Add an extra $50 to that just to be on the safe side."
