Sugarveil should work for it.

Use a lattice Cutter. This picture is of thick heavy dough. But you will get a more defined effect with thinly rolled out material

I have actually used the lattice cutter. Your fondant needs to be very thin and you need to apply a lot of pressure when you roll to make the cuts. The cutter is just like the one for strips - - it's plastic so it doesn't cut cleanly every time. Also, your piece will dry quickly so get it in the shape you need it as quickly as possible. HTH
