Just wondering how long short bread cookies keep for once baked, in an air tight container? I need to do some for my baby shower and do not want to be baking cupcakes and cookies at the last minute!

Cookies with a high butter content may go rancid quickly.
I would package them with parchment or wax paper between layers and freeze.
To defrost, lay them out on a cooling rack for a couple of hours (shortbread is delicate and break easily).
