Need to make ganache..what chocolate works the best?? Do I use Merckens confectionery coating, real chocolate, Peter's--too many choices. Would someone be willing to share the exact CK products item number so I can order from my supplier?? I'd prefer to order in the 1 lb bags, so I can make small batches..Thanks so much!!

I find that ganache is so forgiving you can use just about anything you want, from the finest chocolate to Hershey's Kisses to candy melts and it still comes out great. So I would go by what tastes the best to you or, if you haven't tasted that many, by what other people who have tasted different kinds of chocolate like. Sorry to be so unhelpful about brands, but I don't have access to a lot of them, either (but I've always loved every kind of ganache I've made!).
