Every time I bake WASC variation cupcakes I always get sticky/wet tops. I dont know why this happens. The cupcakes are fully cooked and come out good out of the oven. But then I box them once cooled and they get sticky and almost wet on top. This never happens to my scratch cakes and was wondering why this happens and if anyone has any suggestions to prevent this.

I have this happen to me also, but everybody loves the cupcakes. It is not an issue.

I did a search on it, and it looks like it could be:

STICKY TOP
Covering while still warm
Overmeasurement of liquid. See How to Measure.
Underbaking - oven temperature too low and / or too short a baking time
High humidity

The wet/sticky top of cake is normal for my *original* WASC recipe. Once covered w/icing it makes no difference.

The same thing happens to me. Here is what I have been doing. Place a peice white computer paper over the cupcakes ( usually 1 dozen fill the paper) press down lightly, then lift up the paper. It peels off the sticky wet stuff and leaves the fluffly cupcake.
I do agree that it doesn't hurt them to leave it, I just don't like it. I read this on CC a few years ago from a thread. Works like a charm!
