I've done ruffles in both fondant and buttercream. For the fondant, I used 2 sizes of ball tool; the larger first and then went over it again with a smaller one. The buttercream ruffles were almost as pretty and a lot easier and faster than fondant. Trust me, I've tried (and failed) to get him to reconsider a 5 tiered ruffle cake. He's got his heart set on it. I asked him to consider a 3 tier.. but he says he'd love a 5 tier so much more, and it's a tower cake no less haha
Just last week there was a request for a ruffle cake that was done in buttercream.. and it was completed very quickly, probably no more than 15 minutes (the woman who did is most certainly efficient!) and he absolutely HATED it. So, it's safe to say that's out. I have pushed the idea of a ruffled swag, at first he shot the idea down but I think I've drilled into his head the fact this doing 5 tiers of ruffle (from a 6" to a 14") would take forever and cost MY arm and leg!
