Wow! The batter was absolutely delicious - I can't wait for this thing to be done (it's in the oven)! If you've tried them, are they really that good?? (and I did sub the buttermilk with rice milk and vinegar)

The recipe I used was from allrecipes and it included pineapple. Now that I've been comparing recipes, most Italian cream cake/wedding cake recipes do not have pineapple in them - and the pineapple reminded me of my carrot cake recipe. Which made it seem like something was missing. But after eating it for a couple of days do I think it is a great cake - but I am going to try Emeril's recipe which does not include the pineapple. And has more buttermilk. I will let you know the results!

A traditional italian cake has coconut in it and yes it is delicious!!!! Even people who "hate" coconut love this cake =) i think it would almost be like a pina colada with the pineapple!
