Hi everyone. I am just starting out, and things took off much quicker than expected. I have done all cupcake orders so far but have booked two graduation sheet cakes for 100 people. From reading, I know I'll need 2 12x18 pans together. When I've called local bakeries their sheets (same size) say they will feed 70 people on average, so I'm worried I won't have enough. Also, what is a going rate for them? I'm in Central New York. Some bakeries are $50 while one was $85. Any other helpful hints? Thanks in advance!

Wedding cake serving sizes are 1 x 2 x 4 which in a two layer 12x18" sheet cake this would be 108 servings. Party size servings are 1 1/2 x 2 x 4 and that would give you 72 servings out of a two layer 12x18" sheet cake. So, obviously the bakeries you were calling are quoting you "party size" and since you event is not a wedding that would be customary. Therefore, to get 100 "party size" servings you will have to provide more cake. Perhaps another cake on top as part of the decor?
Price quotes for sheet cakes will vary around the country. You have to go with what is average in your area for basic decorated cake and then go from there depending on the design and amount of work involved in decorating. What I could sell a cake for here would likely be very different for you. HTH

You'll also want to take a look at the food safety laws in your area, I believe NY requires a licensed and inspected commercial kitchen in order to legally sell food directly to consumers.
