Bettercreme Question!!

I've searched but haven't found the answer & I need to know quick! Can I use pineapple juice to flavor Bettercreme or will it break it down due to the acidity? TIA for your help!!

No problem with pineapple juice or any other acidic things in buttercream. The only problem might be that you might have to add so much juice to get the flavor that the icing will be runny. If you can get your hands on a little pineapple flavoring to enhance the juice, it might help. Fortunately, buttercream isn't like gelatin - pineapple juice will really do a number on that!

Sorry, I misread your question - I thought you said buttercream, but you were asking about bettercreme. Engage brain, Marianna. Actually, the answer to the question is the same - stabilized whipped creams like Bettercreme don't break down when acidic things are added, either, but the problem may still be in diluting them too much to get the flavor you want.

Thanks! I will either try a little or search for a pineapple flavoring! My dh just called...he found pineapple jello...I told him to get it as a back up...wonder if that will work? Guess I'll have to try & see!

Actually, it probably will, but just remember two things - you'll need to dissolve the jello in a little hot water - maybe the liquid you'll be using for the icing - or it will be grainy (ask me how I know!) and you'l have to use it pretty fast, because it will set some with the gelatin in it. I think I'd try this first before using it on the actual cake, just in case, but it sounds like it might turn out yummy and maybe a little bit like a mousse.
