Can anyone tell me if they have a good recipe for Apple Cinnamon Cupcakes.

Also, has anyone ever used apple pie filling in their cupcakes as a filling.

Any help would be great.

This one is quite good. It's a cake recipe, but I used it for cupcakes. I made it without the mace, because I couldn't get any, and I grated the apples instead of chopping them. I covered them with a cinnamon icing (made with cinnamon oil, not ground cinnamon), and they were to die for! But even with some other kind of icing, they're delicious and very moist:

3 cups unsifted flour
1 tsp ground cinnamon
1 tsp salt
¼ tsp mace
2 cups sugar (can use less to cut the sweetness)
1 cup oil
3 eggs
1 tsp baking soda
2 tsp vanilla
3 cups peeled and diced Granny Smiths (or other tart baking apple)
1 cup coarsly chopped walnuts (sprinkled with a bit of lemon juice)
½ cup raisins

Preheat ove to 325. Grease and flour a Bundt pan. Mix everything together by hand, adding the apple, raisins, and nuts last. An electric mixture ruins the texture. Pour batter into a prepared Bundt pan. Bake for one hour, or until insterted toothpick comes out clean.

Just tried this tonight using grated apple and omitting nuts and raisins - delish! It is definitely more 'sturdy' than another apple cake I tried ages ago that ended up nearly falling apart. I'm going to pair this with honey cinnamon BC....yum icon_smile.gif

@ wernie - did you add anything else to make up for the lose of the nuts and raisins? And can you post your recipe for the honey cinnamon buttercream? Please?? It sounds delish too!!

I really like this recipe:

Substitute the strawberries for the apples. Add in 1/2 tsp cinnamon. You can also add in a little bit of applesauce.

Sorry, saw your post this morning when I woke up and didn't get to it til I got home from work and finished a cake. BUT I just made the honey cinnamon buttercream - I just adapted my usual BC recipe - so I can give you a recipe now haha. To answer your first question - I maybe added like 1 Tbsp extra flour, but that's it - the batter was really quite thick (I was thinking I did something wrong!), so when I added the 3 c. grated apples and mixed it up it all came together well and was more 'cake batter-like'.

The honey cinnamon buttercream is as follows:
250 g butter (1 c.)
4 c. icing sugar
4 Tbsp. honey - I liked it having a more pronounced honey taste as the cake has cinnamon too, so adjust to your taste
1/2 tsp. vanilla
1 1/2 tsp. cinnamon
~2-3 Tbsp. milk

Pretty easy - just cream butter, add in icing sugar and beat until well blended, then mix in the honey, vanilla, and cinnamon. Then gradually add in the milk, mixing until well blended - you may have to adjust quantity of milk depending on the consistency. Hope you like it - it tastes fantastic with the apple cinnamon cake icon_smile.gif
