I am doing a cake this weekend. and my question is if i finish the cake a day before pick up do i put the fondant covered cake in the fridge. last time i put a cake with regular buttercream in the fridge it came out hard. any advice.
Cakes with buttercream that are refrigerated are supposed to be hard. I keep mine in the fridge until delivery. It's actually a good thing...makes delivery easier and when delivered early, comes to room temp slowly.
For fondant covered cakes it depends on what your filling is. If it's just buttercream or a jellied type of fruit filling it's fine to leave out. If it's a cream or fresh fruit or mousse type of filling you'd be better served by refrigerating it. Sometimes you might have an issue with condensation after taking it out, but it will dry.
As to the drying part, that kind of depends on how humid it is where you live. I can't put fondant cakes in the fridge where I live, because when I take them out, there is so much condensation that it ruins the finish and it never dries. If you finish the cake the day before delivery, it will still be fresh the next day because the fondant seals in the moisture. If you really need to refrigerate it, put it in a box and wrap it airtight with plastic wrap. When you take it out of the fridge, let it come to room temp before you unwrap it. That way, the condensation will form on the outside of the box and not on the cake.
Sometimes you might have an issue with condensation after taking it out, but it will dry.
I refridgerated one of my fondant coverd cakes once and that once was enough for me to declare 'Never again!' to sticking a fondant cake in the fridge. There wasn't condensation, there was SWEATING! as I recall , I CRIED! It did not dry. So I'd leave the cake out of the fridge... There shouldn't be any problems. unless, of course your filling needs to be.
