Hi! I have leftover gum paste that I'd like to store for later use. Do I store this the same way I do fondant or should I store it in a different way?

Put some white fat (Crisco) on your very clean hands and rub it all over the surface of the gumpaste then wrap tightly in Saran and squeeze out all the air and seal. No need to refrigerate but if you aren't going to use it for a few months, go ahead and freeze it or mold (of some sort) will form in colored gumpaste and the surface will look discolored and splotchy.
I've never had mold form in any stored gum paste. It's made of sugar and unless something else is embedded in it that CAN mold, it shouldn't. It does get hard however...no matter how well or how much Crisco you wrap it in. I have not thought of freezing it and will try that as I don't do cakes on a regular basis and am tired of throwing out gum paste and fondant.
I made my own in big batches cause I hate making it , but hate using commercial.
I divide mine up into amounts I know I will use , smear some shortening on the outside ( just a little ) wrap it in glad wrap, put it in a freezer bag and then into a ziplock and freeze it.
I can then just take out a small portion as I need it. If I need more than I though it doesn't take long to defrost and be ready to use.
