Do You Need Torefrigerate Decorators Cream Cheese Frosting?

I just made Decorators Cream Cheese frosting for the first time. I'm wondering if it needs to be refrigerated once its on the cake? Will putting the cake in the fridge dry it out? Its a Giant Cupcake so its got the frosting all over it and inside of it as well.

Hi, i googled this question and here is one of many sites. I do not refrigerate a carrot cake after icing it. I use the original cream cheese icing and do not. A carrot cake with original cream cheese stays in my cake taker for couple days on counter , then all gone!!! I have done this for years. So, i am sure you could do the same for the decorators cream cheese icing. I make that also. Everyone is different and you will get different answers. Leah_s on this site. say putting cakes in fridge will dry them out. I believe her.

I don't refrigerate my cream cheese frosting and I use the same recipe.

Technically, since cream cheese frosting includes a dairy product, it should be refrigerated. Foods that need refrigeration can safely be left out of the fridge for up to 6 hours according to food safety rules. Bacteria need water to grow among other factors, which is why those who leave the frosting out probably have gotten away with it. Cream cheese frosting has low water content which slows bacteria growth. (Frostings made with powdered sugar and shortening, for example, can be left out forever, because there's nearly no water in them). Still, bacteria will grow in cream cheese frosting, and will grow fastest at temperatures between 41 and 135 degrees Fahrenheit.

So if you want to be safe, or if you are selling cakes and want to comply with food safety regulations, you should put your cakes with cream cheese frosting in the fridge and take them out before serving to warm to room temperature.

By the way, Food Network has a post on this topic on its blog (without the discussion of bacteria growth) and they say refrigerate!

That's not true. The amount of sugar in the recipe acts as a preservative. Look up Earlene's recipe you don't have to refrigerate her cream cheese frosting either. I have used this recipe for years and nobody has ever gotten sick. Some people say you need to keep butter refrigerated but I know plenty of people who keep it in a butter dish on the counter. My mom has done this her entire life and she's in her 60"s.
