I am able to purchase eggs for $.78 a dozen this week. It is a steal!
Would like to take advantage of this price by freezing the eggs and whites.
Has anyone had any success or tips on how to do? Will cakes still rise as good with frozen eggs? How long can you freeze?
Thanks in advance!!

I heard that the only way you can freeze an egg is to seperate the yolk from the white, beat the yolk slightly and beat the white slightly, freeze in seperate plastic containers and when you defrost them to add a pinch of salt if using the egg for savoury or a pinch of sugar if using for sweet things.

I've never actually used a frozen egg for a cake though, why not do a test?
Freeze one egg seperated etc then defrost it and make a small cake and see how it tastes?

Hope that helps icon_smile.gif
