My son is getting married Saturday April 28th!
He and his beautiful soon to be wife wanted an almond cake with 200 cupcakes. I have made them and wrapped them individually with saran wrap cause I had NO idea what container I could put them in without them getting freezer burnt. (any info on that I would love it!)
They want me to pump my traditional pudding in each one like I do my cakes but I am stuck cause I don't know when I am going to do all this! I have help with my little ones with getting them ready all 3 of our little ones are in the wedding too!
the wedding is at 1:30 saturday!
I don't know if I could ice and pump the pudding in them friday night and keep them at the church for the wedding and then I can put it all together sat morning...but will the cupcakes be ok for overnight and that day till about 4 or 5?
How long do they need to be thawed out? do I keep the saran wrap on them as they thaw? I live a half hour from the church so should I get them out of the freezer around 2 on friday box them up with saran wrap on them and take them to the church do rehearsal dinner then ice them and pump them and then let them sit overnight and then put the cupcake tower and cakes together saturday morning???? I just want to have it mostly done friday not have to ruch and get ready and get kids ready on saturday ahhhhhhh.....LOL
I am so sorry I am all over the place I am not a perfessional but my son has always loved my cakes and I just dont know what to do. With the other tower I didn't have kids to get ready! I could focus on the cake and that was it!
Thank you so much for your time and help in advance! I am so thankful for this website!!!!

First of all... stop... breathe.... all will be fine! You are getting caught up in everything and getting yourself stressed out!!! I don't see why you couldn't fill and ice the cupcakes Friday. I would do them at the church and then find a cool room to set them in, covered. They shoud be fine I would think. I don't know what is in your filling but unless it is something very unstable.. it really should be fine.. just keep in a cool part of the church..or their fridge if they have one and have room.

cupcakes take no time at all to defrost...... Say an hour maybe?? at the most!

Good luck and I hope you get to enjoy some of the wedding festivities!!!! You will be just fine!

Oh my goodness mcdonald you have been such an encouragement and stress reducer! I was told that the cupcakes would spoil if I left them out and then I was told if I put them in the fridge they would get hard! My girlfriend just got married and her cupcakes were sooo hard and horrible and they made them in advance. I just want it to be perfect for my son! He is so excited to have me make his cake! It's so wonderful! So I will do just that! I will get it ALL done on Friday! Thank you so much! I appreciate your help! It means so much that you care enough to help with my breathing LOL icon_biggrin.gif
So excited to relax now and just enjoy the rest!!! 2 days! WAHOOOO!
