I made sugar shack's icing for the second time last night and everything was goin well. It looked great unitl I added the last pound and a half of sugar. Then it started to look hole-ly. The paddle was completetly covered but I could see air pockets. Please help, it's a lot of icing to waste. It taste great, but I need it to look great too.

When I use that recipe, I do get the airbubbles or pockets too. However, I notice the next day when I slowly mix it then use BC, the air pockets are gone and it is smoother.

Thanks, I hope that is the case for me. Do you know how long this icing can stay out of the refrigarator?
