Hey all,

I have a order due for a Torah Scroll cake next week and I have been trying to figure out how to make the scrolls... the cake will look similar to this one. I have thought about cooking the cake in loaf pans and then carving them to look like the scroll shape. Does anyone have any other ideas? Do you think I should put supports underneath the scrolls so the cake below doesn't sink? Cake will be a full sheet cake.

THANKS GUYS!

I've only seen these done by hobby (not-professional) bakers. They usually use a jelly-roll cake for the scrolls.

Food cans will give you the shape you need. Make as many as you need and dowel them through the center to keep it fhem from moving. You can let the dowels protude a bit and cover with gumpaste to form the 'knob' on the scroll. This way they have something to hold onto to pull the dowel out before they start cutting into the scrolls.

That is a fantastic idea! So when you say food cans do you mean cans that like beans and corn come in? I suppose if I just line the cans well with crisco and dust with flour the cake should pop out okay. I've thought about doing jelly roll for them but that just seems like too much work and they never turn out well for me.
