I work full time and I can only do caking about 3 to 4 hours in the evening. I have a 3 tiered topsy turvy cake due on Saturday with ganache. My cakes are baked already. How soon can I start to ganache and cover with fondant so I can decorate Friday night for Saturday delivery? I want the cake to be fresh. Thank you for your help!

Take the cakes out of the freezer Thursday morning so they can thaw whilst you're at work. Ganache and fondant Thursday night, decorate Friday, deliver Saturday.
