Hi everyone,

I've tried a few(read: alot) recipes of vanilla cupcakes but they are never that moist or has that yummy taste. I'm a sucker for cupcakes which are VERY moist and light. If anyone could share a recipe that would be really awesome.

I really like the Ultimate Vanilla Cupcake recipe. I found it on a blog, but I can't remember which one right off the top of my head. I'm sure it'll come up if you google it though.

I believe you're talking about the Cupcake Projects Recipe. Personally I found the cake to be too light, it was as if I was eating air almost.

Glory from Glorious Treats makes a delicious vanilla cupcake. It's called Perfect Vanilla Cupcakes...I use her recipe when I want vanilla cakes. icon_smile.gif

I am loving FromScratchSF's white cake recipe (that can be made into a yellow cake by using whole eggs instead of just the whites). It's a great texture and taste. I did have to modify the baking powder and baking soda though. The first time my cupcakes sank. So the second time I made it I reduced the baking powder to 2.5 tsp and the baking soda to 1/4 plus 1/8 tsp. They rose up and did not sink one bit. When I use my taller cupcake liners it's like I bought a $4 cupcake from the boutique icon_smile.gif
