Those are ribbon.
Yes, you do them with fondant ribbons. I did it with Sugarveil ribbons and it worked very well.

I didn't find it difficult. I spread out the Sugarveil on my smooth silicone mat, ran my FMM ribbon cutter thru it, and when it was dry I chose the best one's to use.
