I just purchased a full size convection/combi oven to use in my cupcake business. The top of the cupcakes seem to get a little crispy. I don't know anything about the combi part of the oven and do not have it hooked up to a water source. Would that make the tops less crispy? Anyone with suggestions?

Convection ovens have the potential for creating an unpleasant hard top crust. If possible, turn off your fan or at least put it on low. And turn the temp down about fifty degrees. Do not use the steam injection, which will exacerbate the problem.

1.If you bought the oven from a manufacturer or dealer, ask them for help. Many of these companies can send a sales rep to show you how to get the most from your oven. 2. Request a Use & Care manual from the manufacturer. 3. Search google for more tech help.

Convection ovens have become popular because of their small footprint. But they're really not the best oven for many baked goods.
