I recently bought a can of the Wilton Gum Paste Mix to try. Mixed up great and the consistency seemed perfect to me. But when I go to roll out and cut flowers it is taring very easily. So easily I cannot even get through a petal. It's like there is no elasticity. What could I have done wrong? The mix calls for powdered sugar and water. Is there anything I can do to fix this?

You're right, it doesn't have the elasticity that home made gumpaste has. Try working in some Crisco. The elasticity comes with the gelatin. If there's not much gelatin, there's little elasticity. It's so easy to make your own. Takes me 15 minutes to whip up a batch. I used the Wilton powdered mix two days ago in cutting out an adirondack chair but something about the paste wouldn't allow anything to stick the pcs together. Not white chocolate or even a glue gun. Not buying it again.
