Can someone direct me to a pineapple filling recipe? AND does it have to be refrigerated?

I don't know the flavor you are looking for, but can you caramelize the fresh pineapple with butter and brown sugar on the stove? I only use fresh and this is incredible. You can even go so far as to make a "Pineapples" Foster.
