Organic Scratch Cake Help

In a couple of weeks I want to attempt a decorated cake but try a couple of new things. First I've always done a doctored cake mixes, but I want to make a scratch cake with organic ingredients. Does anyone have any suggestions on recipes that I could use for a scratch vanilla/chocolate cakes that use organic ingredients and hold up well?

Also I might use fondant on the cake. While I may not necessarily focus on making the fondant organic, I thought about maybe trying Swiss meringue buttercream for the first time. Would this type of frosting work well if made with organic ingredients and if the cake is covered in fondant? Thanks.

If you have a great scratch recipe that you like, you can just substitute organic products for the ingredients...I've done that before successfully...used organic unbleached all purpose flour, organic milk, eggs etc. Hope that helps!

I agree with Caymacakes. The organic products will not change anything. Same with the SMBC. Be sure to practice the SMBC ahead of time. If you make it successfully, just refrigerate it and save it.

The easiest chocolate cake is Hershey's Perfectly Chocolate. I sub sour cream for the buttermilk and only use 1 tsp of each leavener.

For yellow, an easy one is Cake Love's. It's on his site.

Both of these can be done by a novice scratch baker. Get yourself a few baking strips and an oven thermometer and good luck. You will have great results.
