Fridge to freezer?

I made three cakes for my son's birthday. I always bake, then freeze right away. I gave them to my husband to put in the garage freezer on SATURDAY. I just went out to the fridge in teh garage to put something away and guess what I found?
Yep, cakes. Grrr.
So, the question is, are the cakes fine, if they have been in the fridge for three days and then go into the freezer?
Should I m ake them over? Which I really don't have time and inclination to do, but if the other ones are going to be bad, then I will.
They were yellow cake with polka dots. In other words, I made cake balls and baked them again inside the cake. I tried it as an experiment first and it worked great. Saw it on a blog.
Anyway, I don't know how the balls in the cake will fare having been in the fridge for three days first.

My thought would be to rebake because the fridge tends to dry out cakes. I guess it depends on how well they were wrapped an if they were warm when you wrapped them. If they haven't been leveled, perhaps level on and see how dry the cake is.

Some others may say go ahead and bake and just use a flavoured simple syrup on the cake to put some moisture back in.

But if you're hesitating about putting them in the fridge and thinking you should rebake, I'd go with your gut.

I would say they are fine.. but you should test if your concerned about dryness. I use simple syrups and they work just fine...

How do you use simple syrup? Can you use simple syrup after the cake has been frozen. Good someone share a recipt for simple syrup to use for a chocolate cake? Thanks

They were wrapped well. I had leveled them to the pans and just wrapped the whole thing in many layers of saran wrap and then put the whole pan in a plastic bag.
I guess I'll just go with it, since it's just for us.
This kind of thing is exactly WHY I don't do this for money icon_smile.gif
