Freezing A Cake Covered In Marshmallow Fondant

Has anyone ever frozen a cake covered in MMF. Was is sucessful? I often need a cake done mid or late in a week, and I only have the weekend before to work on it. Any tips would be appreciated.

I have never tried it, but I'm guessing it would not work well. I have refrigerated MMF coverd cakes, especially in the summer and when you take them out they condensate and get sticky and you cant do anything with them at that point. I would think freezing them would do the same thing and your MMF would end up moist and sticky.

I wouldn't do it! Bake, torte, fill, crumb coat & freeze on the weekend. Make your fondant on the weekend. But cover the cake closer to delivery & keep it out of the freezer once covered!
