I need to make some sugar cookies for my daughters teachers I dont want to rush but I want to do something extra special. How far ahead can I make them and store them? I want them to be as fresh as possible but I dont want to stay up all night the day before. I've heard you can freeze decorated cookies but I'm afraid the colors will bleed when they defrost. I make hundreds of decorated cookies at Christmas, and have frozen them without any problems. I do wrap individually in the little cell bags with a pretty ribbon. I use all mediums--fondant, chocolate, poured sugar (gems), royal icing--I do let them dry overnight before putting in the bags...
Really glad someone asked about freezing them have wanted to before but was afraid they wouldn't turn out right. I make cookies for my sis who has a special diet but they don't keep long. So maybe I might try freezing them so she can defrost them as she wants them

Jeannem, If I may, You said you froze the cookies with fondant, Wrapped in the little bags, When you took them out, did they get wet from condensation. Did you just take them out the day before you needed them?
I would like to know about the fondant as well, also are you defrosting them in the fridge or at room temp?
