Allergic to eggs

ok I have made and LOVE the NFSC and I want to make some for our family's Easter dinner but we have a cousin who's little girl is allergic to eggs along with a list of other stuff and I want her to be able to enjoy a sweet just like the other 20 kiddos that are going to be there ( she's 4 and used to not getting stuff b/c of that and it breaks my heart!) What can i sub for? And still have the right taste? Anything? Thanks in advance!!!

It's tough to just sub out the eggs in an existing recipe without R&D. You are probably better off finding another recipe, you can search "vegan sugar cookies recipe" on Google to find several options.

my daughter is allergic to eggs as well. I haven't tried it with the recipe you mentioned, but I have had great success using a product called "Egg Replacer" from Ener-G. It's a powder, and I find that for each egg called for in a recipe, if I use a bit more than 2 tbsp of warm water and two heaping teaspoons of the powder for each egg and whip them to frothy in a separate bowl and add them as the last ingredient to a recipe it turns out pretty well. It works great for cakes. Cookies are bit harder, but it might be worth a try. Best of luck! I think it's great that you want to have a treat for your niece as well. Too often the kids with the allergies feel left out or just get used to not getting what everyone else gets. So kudos to you for even trying!

Thanks I try icon_biggrin.gif my DD used to have her liquids thickened ( she couldn't swallow right) and nobody thought about her so I really do try to think about them exp the little ones!!

Because of my egg allergy, I use a shortbread recipe for cut out cookies. It works great and tastes great! Google "wacky cake". An egg free chocolate cake that has been much loved for many years.

I've successfully used the NFSC recipe, and others, by replacing each egg with a mix of cornflour (cornstarch) and water. For one egg, use 2 tsp cornflour + 1/4 cup water, heated in short bursts in the microwave until it thickens. Leave to cool before using. I found this method in a book called Vegan Cookie Connoisseur and it works great.

If eggs are binders in a recipe, it can be replaced with Arrowroot, Soy, Lecithin, Flaxseed Mix, Pureed Fruits or Vegetables, Silken Tofu, Unflavored Vegetarian Gelatin Powder (agar agar). The ratio is, for every egg replaced, 1/4 cup of the substitute is used.
If eggs are leavening agents, Buttermilk, Yogurt, Baking Soda, Commercial Egg Replacement Powder such as Ener-G can be used.
If eggs are moisturizers, Fruit Juice, Milk, Water or Pureed Fruit can be used.
